Banana and Coconut Cake

Ingredients
- 3 ripe bananas
- 1 teaspoon each ground ginger, allspice and nutmeg
- 1 teaspoon vanilla essence
- 1/2 cup vegetable oil
- 1/3 cup raw sugar
- 2 cups self raising flour
- 1 teaspoon bicarb
- 1/2 cup soy milk
- 1 tablespoon vinegar
- 30g Nuttelex
- 1 cup icing sugar
- hot water
- 1 teaspoon vanilla essence
- 3 tablespoons desiccated coconut
Method
- In a large bowl, mash the bananas. Stir in the spices, essence and oil.
- Add the sugar, bicarb and flour and mix well.
- Add the soy milk to make a smooth batter. Stir through the vinegar.
- Pour batter into a greased and floured tin and bake in a 180 degree oven for about 30 minutes or until brown and cooked.
- When cooled, mix together the Nuttelex, icing sugar and vanilla essence to make a thick frosting. A little hot water may be added to help mix. Spread roughly on top of cake and sprinkle coconut on top.
